Mrs. Lori Ann Jencks (née Mittelsdorf), age 64, passed away peacefully on October 9, 2025, in Penrose, Colorado. Born on October 27, 1960, in Tampa, Florida, Lori lived a life marked by resilience, warmth, and an unwavering love for her family.
Lori graduated from Robinson High School in Tampa in 1979. Shortly after, she answered the call to serve her country by enlisting in the United States Army. During her four years of honorable service, she was entrusted with important responsibilities such as logging pilot flight times and supporting various operational tasks. Her time in the military reflected her dedication and sense of duty.
Throughout her life, Lori held a variety of jobs, but she found particular joy working as a barista at Starbucks. It was there that her bright spirit truly shone—her co-workers and customers alike were drawn to her friendly demeanor and infectious smile. She had a gift for making people feel seen and appreciated with even the smallest gestures.
Lori’s faith was a quiet but steady presence in her life. Though she did not attend church regularly, she held a strong belief in God and carried that faith with her through all of life’s challenges.
Above all else, Lori cherished the time spent with her daughter, Leslie Quimby. Their bond was deep and unbreakable—a true testament to the love between mother and daughter. Whether they were shopping together, enjoying meals out, watching movies side by side, or simply sharing coffee and conversation, every moment was treasured. Coffee was one of Lori’s favorite indulgences; it brought her comfort and joy and often served as the backdrop for meaningful time spent with those she loved.
Lori is survived by her beloved daughter Leslie Quimby and Leslie’s husband Demetrius (Mitch) Vigil. She is also survived by her brother Thomas Mittelsdorf.
She was preceded in death by her father Thomas Mittelsdorf; her mother Lois Mittelsdorf; her late husband Phillip Arthur Jencks; and her paternal grandparents.
Lori will be remembered for the light she brought into every room and the strength with which she faced life’s trials. Her optimism never wavered—even during difficult times—and she made it her mission to enjoy life to its fullest. Those who knew Lori will carry with them memories of her laughter, kindness, and enduring positivity.
She leaves behind a legacy of love that will continue to live on through those who were fortunate enough to know her—especially her daughter Leslie, who will miss her more than words can express.
May Lori's memory bring comfort to all who mourn her passing and serve as a reminder of the beauty of a life lived with heart and hope.
